Abstract

In recent years, the chains of dairy and cattle meat, shows a trend that can be listed in the following aspects: 1) changes in preferences on the part of consumers, 2) few credit incentives for livestock activity and 3) appearance of alternative agricultural headings. Despite this, these cattle breeding and processing chains represent an important source of resources, employment and the development of new businesses and products, being a relevant activity from the economic, environmental and social point of view, more specifically in the Province of Hato Mayor. The objective of this research was to analyze the operation and level of competitiveness of the value chains of meat, milk and their derivatives that work in the province of Hato Mayor, for this it was necessary to develop a methodology that included the information collection activities. field, secondary information and attendance at meetings and seminars related to the production and marketing of milk, meat and dairy products in the eastern region and the province of Hato Mayor.

At the end of this investigation we have been able to make a synthesis by way of conclusions that are derived from the following: Little productivity in dairy production, little formal financing for the production of cheeses, sweets, yogurt, sweets and preserves, in around 40% Most of the medium production farms are attended by family employees. The commercialization of the transformed products is very rudimentary. The producers must use their own vehicles to transport their products to the points of sale.
