Abstract

The gastronomy in Ecuador is very diverse, each one of its regions contributes with gastronomical and cultural wealth with ingredients that heighten their flavors, aromas, texture and varied color. The Ecuadorian kitchen has been influenced throughout history by the Spaniards during the conquest and by other cultures that have arrived at the country. The province of Los Rios counts with thirteen cantons, and a wide range of authentic and racially mixed meals. The establishments dedicated to sell drinks and meals do not count with experience or technical knowledge in the types of services required, therefore How to promote the gastronomical and cultural identity of the cantons of the province of Los Rios? 

The main objective is to foster the gastronomical and cultural identity through strategies for rescue, diffusion and preservation of the typical and traditional meals in the cantons of the province. In order to obtain these actions it requires for a diagnosis on the typical and traditional gastronomy, then to design strategies, and systematize through a web site, where restaurants and typical meal trucks are promote.
