Abstract

Food industry produces a lot of waste and consumes a lot of water. The principles of cleaner production have many applications in the food industry, these principles are necessary to ensure production quality avoiding the continuous deterioration of the environment. This article provides a detailed assessment of a small business dedicated to the production of artisan juice in the city of Colon. Descriptive analyses of the quality of the improvements that can be achieved through an audit of the environmental impact of the production process are presented.
