This study analyzes the productive and industrial development of Omega-3 enriched quail eggs (BioHuevos Premium) in Panama Oeste from 2011 to 2025. From a microeconomic perspective, it explores consumer behavior, perceived utility, willingness to pay, and preferences for functional, healthy, and innovative foods. The research uses official sources, producer interviews, and consumer surveys in La Chorrera and neighboring districts. Findings show an emerging market with high growth potential, driven by increased health awareness and demand for value-added products. A model of industrial, technology-driven production is proposed to scale local supply and position this product in the functional food market.
