Abstract

The purpose of this work was to evaluate four fish species that are considered commercial and that are sold in two main markets in the Province of Coclé. The work that is considered exploratory randomly measured the freshness index through tables of quality categories, established by the ITP (Technological Institute of Peru), covered 4 species of importance in the region, such as: sea bass (Cynoscium  albus), pacific sierra (Scomberomerous sierra), snapper (Lutjanus perú) and green jacks (Caranx caballus). The results obtained in this exploratory research, indicate that in most of the species studied, the Río Hato market provides species with a higher degree of freshness than the Penonomé public market P < 0.05. However, regarding the freshness of the different fish species studied, they are in a low index, but at least acceptable for human consumption.
