Olive tourism has aroused growing interest among tourists, being seen as a complement to other resources and tourist attractions. The objective of the research was to map in an Oliveira company in Brazil the determining aspects of innovation in the tourism sector due to the insertion of oleotourism. Regarding the methodology, it was classified as a case study, with a qualitative, descriptive and exploratory approach. An interview was carried out with the person in charge, through a semi-structured script, made up of open questions. The data showed that the determining aspects of innovation in tourism are important for the practice of oleotourism. And, being attentive to the market is essential so that the company can compete better. As for the final considerations, the need to improve its production processes is clear, as well as the concern with the needs and expectations of visitors to launch new products/services and differentiate themselves in the market.
