The aim of this investigation was to evaluate Listeria spp. in environmental samples taken inside a company of handcrafted production of fresh white cheeses, located in the Province of The Saints, during December, 2008 to March, 2009. The samples were taken by triplicate in two sites of the zones of direct contact and two sites of indirect contact by the food. Of 72 evaluated samples, 70 % was positive for Listeria spp. being highly significant differences to 99 % of statistical probability, in the quantification between the zones of direct contact (46.7 %), and indirectly (36.3 %), with the food. In the isolations Listeria monocytogenes was not detected, in any of the positive samples for Listeria spp., but there were detected other Listeria's species, which were L. seeligeri, L. grayi and L. welshimeri, demonstrating these results that Listeria monocytogenes might appear with the probability of forming potential reservoirs, as biofilms.
